The carefully selected grapes are gently destemmed and undergo spontaneous fermentation thanks to the native yeasts present on the skins, fermenting for approximately 15 days at a controlled temperature of 25\u00b0C.
During winter, malolactic fermentation occurs naturally, carried out by the lactic acid bacteria naturally present in the wine. This is followed by a long aging and maturation process.
The wine ages for the first 12 months in stainless steel tanks, then 12 months in French oak barriques, and finally, another 9 to 12 months in the bottle before release. <\/p>\n <\/div>\r\n\r\n

VISUAL: Deep garnet red, full-bodied, with brick-red reflections.
OLFACTORY: In the glass, it is impossible to overlook, with aromas ranging from spices and licorice to a full spectrum of balsamic notes, including sage and rosemary.
Highly intense, it offers a broad array of elegant aromas, featuring wild black cherry, plum, blackberry, currant, violet, vanilla, chocolate, cinnamon, licorice, and pepper, with final balsamic hints of menthol.<\/p>\n <\/div>\r\n\r\n

On the palate, it stands out for its incredible smoothness and absolute roundness.
It is warm, smooth, savory, and remarkably persistent.
