The carefully selected grapes are gently destemmed and undergo spontaneous fermentation thanks to the native yeasts present on the skins, fermenting for approximately 15 days at a controlled temperature of 25°C.
During winter, malolactic fermentation occurs naturally, carried out by the lactic acid bacteria naturally present in the wine. This is followed by a long aging and maturation process.
The wine ages for the first 12 months in stainless steel tanks, then 12 months in French oak barriques, and finally, another 9 to 12 months in the bottle before release.
VISUAL: Deep garnet red, full-bodied, with brick-red reflections.
OLFACTORY: In the glass, it is impossible to overlook, with aromas ranging from spices and licorice to a full spectrum of balsamic notes, including sage and rosemary.
Highly intense, it offers a broad array of elegant aromas, featuring wild black cherry, plum, blackberry, currant, violet, vanilla, chocolate, cinnamon, licorice, and pepper, with final balsamic hints of menthol.
On the palate, it stands out for its incredible smoothness and absolute roundness.
It is warm, smooth, savory, and remarkably persistent. The flavors perfectly match the aromas perceived on the nose, creating a balanced, harmonious, and refined wine with excellent taste and great aging potential.
