Spontaneous fermentation at controlled temperature for 7/10 days. During 'winter, malo-lactic fermentation occurs spontaneously. Maturation takes place in French oak barrels for 6 months after storing one year in steel, additional 6 months of bottle aging are necessary to give body and elegance to the wine.
VISUAL: Intense ruby red, consistent.
OLFACTIVE: Intense, persistent and fine, hints of black cherry jam, plum, black currant and black elderberry with fragrant spicy herbal notes.
Warm, soft, savory with excellent balance between alcoholic power, acidity and tannins. Complex, spicy flavors reminiscent of black cherry, blueberry, blackberry, cinnamon, licorice, black pepper; a harmonious, fine wine of long evolution.
